1/2 tbsp butter
1/3 cup steel-cut oats
1 cup boiling water
1/3 cup equal parts buttermilk and cream or whole milk
In a pot, toast the oats in the butter over medium heat for a few minutes, or until the grains begin to brown and begin to smell nutty. Pour in the boiling water and put the lid on the pot. Reduce the heat to low and simmer for about 13-15 minutes, or until the water has almost completely absorbed into the oats. Gently stir in the buttermilk and cream mixture and salt. Top with brown sugar and raisins, if desired.
