4 cups rolled oats (also called "old fashioned" oats)
1 cup whole wheat flour
1 cup nonfat dry milk OR soy flour
1 cup wheat germ
1 cup vegetable oil
1 cup honey
1 tsp. cinnamon
Preheat your oven to 250 degrees. In a large bowl, stir together the oats, flour, dry milk, and wheat germ. In a large measuring cup, stir together the oil, honey, vanilla, and cinnamon. Stir the oil and honey mixture into the oat mixture until well combined (it should be somewhat clumpy.) Pour the granola into a baking pan (at least 13x9x2) and bake for 1 1/2 hours, stirring every 30 minutes. After the granola has finished baking, allow it to cool completely before placing it in an airtight container.
If you like, you can add coconut flakes, sesame seeds, or sliced almonds to taste -- depending on how much you want to add, the mixture may get a little dry. In that case, just add a little more oil and honey as well. Dried fruit is great in granola, but if you bake it with everything else it will get really dry -- and that's not tasty, so if you plan on adding it, do so when the granola has finished baking.
